  • 4 cups kutaifi dough + 1/4 cup clarified butter (Below)
  • 1 1/2 cups kutaifi dough + 1/4 cup clarified butter (On Top)
  • 2 cups akawi cheese, shredded (Middle)

  • 2 cups water
  • 1 cup sugar
  • Rose water, to taste
  • 1/2 cup chopped pistachios

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with butter.
  2. In a bowl, gently separate the shredded phyllo dough strands. Drizzle with clarified butter and toss to coat.
  3. Spread the first part of the phyllo dough evenly in the baking dish to form a base layer.
  4. Sprinkle shredded akawi cheese over the base layer.
  5. Layer the remaining phyllo dough on top of the cheese.
  6. Bake for 30-45 minutes or until golden brown.
  7. In a saucepan, combine water and sugar. Bring to a boil, then simmer until sugar dissolves.
  8. Remove from heat and add rose water to the syrup.
  9. Pour the hot syrup over the baked cold knafeh. Don’t add hot syrup on hot knafeh.
  10. Sprinkle chopped pistachios over the knafeh.
  11. Allow to cool slightly before serving.
