As you know, I love snacking. Recently, I’ve opted for healthier choices because I realized I constantly had cravings for snacks. Every morning at work, around 11 a.m., I felt the need for a boost. I would rush to the vending machine for a chocolate bar. However, less than an hour later, I would once again feel that irresistible need for sugar. I then realized that I was actually causing spikes in my blood sugar levels that would quickly drop, leaving me with a craving for sugar once again. That’s when I decided to make my own snacks and carefully choose the ingredients that go into them.

Since I’ve always been fond of Twix with its crumbly base, velvety caramel, and touch of chocolate, I was intrigued by the idea of testing “Millionaires Bars,” as they have a similar recipe profile. This recipe is crafted from tahini, a pure sesame seed paste. Without further ado, let’s explore the recipe for “Millionaires Bars” together.

Tahini is a sesame paste typical of the Middle East and widely used in Lebanese cuisine, among others. But tahini can also be used in sweet dishes! Who would have thought that tahini could be such a great base for caramel?

Chocolate

Chocolate adds the final touch of indulgence to your millionaire shortbread. I used to make the mistake of using regular chocolate bars… And then I discovered the concept of “couverture” chocolate, which is specifically designed to melt easily. If you have the time, you can also temper the chocolate to maintain a high-quality texture after it cools.

Ingredients

  • Shortbread Biscuit
  • 100g almond flour
  • 3 tbsp coconut oil
  • 2 tbsp date syrup or other natural sweetener of choice (Maple, Agave...)
  • 3 drops vanilla extract
  • 1 pinch of salt

Tahini Caramel

  • 220g tahini
  • 50g date syrup
  • 50g coconut oil
  • Vanilla
  • Pinch of salt

Chocolate Topping

  • 250 g chocolate

Instructions

    1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
    2. In a mixing bowl, combine the almond flour, coconut oil, date syrup, vanilla extract, and a pinch of salt to create the shortbread dough.
    3. Line a baking tray with parchment paper. Spread the shortbread dough onto the tray, using your hands or a spatula to press it evenly.
    4. Place a second sheet of parchment paper on top of the dough to prevent sticking, and use a rolling pin to gently flatten and smooth the dough to your desired thickness.
    5. Bake the shortbread in the preheated oven for 13 minutes, or until it turns a light golden brown.
    6. Once baked, remove the shortbread from the oven and allow it to cool on the tray for about 20 minutes. This helps it firm up before adding the caramel layer.
    7. While the shortbread is cooling, prepare the caramel. In a saucepan, combine the tahini, date syrup, coconut oil, a dash of vanilla extract, and a pinch of salt. Heat the mixture over medium heat, stirring constantly, until it comes to a gentle boil. Allow it to boil for 5-7 minutes, continuing to stir, until it thickens and develops a caramel-like consistency.
    8. Remove the caramel saucepan from the heat and let it cool for a few minutes.
