Sweet Potatoes Gnocchi

Sweet potatoes gnocchi are my favorite. Unfortunately, we don’t have many in Morocco. But during winter, you can find some in the North of Morocco (I don’t know why). But not for long… Each year I would be on a treasure quest looking for sweet potatoes. To this day, I don’t know why it is so hard to find them (while you can find a lot of exotic products such as Dragon fruits!). Usually, in Morocco, we use potatoes that are more white we call sweet potatoes… Weird, I know.

Since I live in the US now, it’s no longer a problem. You can play with sweet, purple, mini potatoes! I know that potatoes are not known to be very healthy, but sweet potatoes are different as they have a lower glycemic index!

This recipe is indulgent if you want some yumminess during fall or if you have friends or family coming.

It takes some time to learn how to do the shape, but honestly, it’s soooo good it’s totally worth it.

Next step, I really need to buy a shaper 🙂 Yes, I am a shopaholic when it comes to food and baking.

In this recipe, I decided to give you 2 options. The first one is sage and butter sauce and the second one is with fresh spinach. Both are amazing.

Ingredients

  • 2 large sweet potatoes, peeled and boiled until tender
  • 2 cups all-purpose flour
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • Fresh sage leaves
  • Grated parmesan cheese (for garnish)
  • Pasta Water
  • Ingredients for Spinach Sauce:
  • 2 cups fresh spinach leaves
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • Pasta Water

Instructions

    Make the Sweet Potato Gnocchi:

  1. Mash the boiled sweet potatoes in a large bowl until smooth.
  2. Add flour, parmesan cheese, salt, and nutmeg. Mix until a dough forms.
  3. Divide the dough into small portions and roll them into long ropes.
  4. Cut the ropes into bite-sized pieces and shape them into gnocchi using a fork.
  5. Cook the Sweet Potato Gnocchi:
  6. Bring a pot of salted water to a boil.
  7. Drop the gnocchi into the boiling water and cook until they float to the surface (about 2 minutes).
  8. Remove the gnocchi with a slotted spoon and set them aside.
  9. Reserve some of the water for the sauce


Prepare the Sage and Butter Sauce:

  1. In a pan, melt the butter over low heat.
  2. Add fresh sage leaves and cook until crispy.
  3. Toss the cooked gnocchi in the sage and butter sauce until coated.
  4. Serve with a sprinkle of grated parmesan cheese.

Prepare the Spinach Sauce:

  1. In a blender, blend the fresh spinach leaves, garlic, and olive oil until smooth.
  2. In a pan, sauté the spinach sauce briefly.
  3. Mix the cooked gnocchi with the spinach sauce until combined.
