It’s funny the first time I wrote this recipe I was living in Casablanca Morocco. I think it was during COVID. I’ve always loved lemony flavors and when I saw this recipe I was like “I need this in my life”. This vegan / sugar free version was delicious and I loved it. The funny part of the story is that few years later, here I am, living in Miami! I am literally living few hours drives away from Key West, where Key Lime Pie was born!! Isn’t it crazy?

Is the best Key Lime Pie in Key West ?

I went to key west and I tried the key lime that was featured as Top key lime in Key west and honestly I was a bit disappointed :(. My favorite key lime is the one I found in Miami actually. They have the cutest little shop in Coconut Groove (literally long the road). There is also a key lime pie vending machine at Julia & Henry’s haha. Yes you’re in Florida! That was my fun story with the key lime pie. And now the recipe.

Ingredients for Vegan Key Lime Pie:


Crust:

The base of the vegan key lime pie is a crushed biscuit that we’ll butter to create a compact texture during baking. I recommend using digestive biscuits, which are not overly sweet, but you can choose your preferred type of biscuit.

Cashews:

Cashews are rich in healthy fats, vitamin K, magnesium, and phosphorus. For this recipe, opt for unsalted cashews. Make sure to check the label for the “unsalted” indication, as cashews are commonly enjoyed as salted snacks.

For this recipe, soak the cashews in water the night before or in the morning for the afternoon preparation. This step is crucial to achieve a smooth consistency for the filling.

Coconut Cream:

I’ve used a special ingredient for this recipe – coconut cream. Please note that this is not coconut oil or coconut milk, but a liquid cream. It often contains sugar, so try to choose a variety with the least amount of added sugar.

Key Limes:

Key limes will bring a tangy flavor to the recipe. If using zest, opt for organic key limes.

Key lime pie is a classic recipe in the United States, originating from the Key region of Florida. Traditionally, key lime pie is made with egg yolks, sweetened condensed milk, and lime juice, which gives the pie its name.

Now, we're bringing you a 100% vegan twist on this beloved dessert – Key Lime Pie 100% vegan, 100% delightful!

Cook Time 8 minutes
Additional Time 4 hours
Total Time 4 hours 18 minutes

Ingredients

  • 150 g of digestive-type biscuits (ideally sugar-free)
  • 50 g of butter
  • 100 g of coconut cream (not coconut milk 😉)
  • Juice of 4 large key limes
  • 150 g of unsalted cashews, soaked in water for at least 4 hours
  • Date Syrup (or Agave)

Instructions

  1. Preheat the oven to 150 degrees Celsius (302°F).
  1. Melt the butter.
  2. Blend the biscuits and butter in a food processor.
  3. Place the mixture into silicone cupcake liners, pressing down with the back of a spoon.
  4. Bake in the oven for 8 minutes at 150 degrees Celsius (302°F).
  5. Meanwhile, blend the soaked unsalted cashews for 3 minutes until smooth.
  6. Add the lime juice and coconut cream.
  7. If the coconut cream is not sweetened, add 3 tablespoons of date syrup (or agave syrup).
  8. Blend again and pour the cream onto the cooled crust.
  9. Refrigerate the mixture for at least 4 hours.
  10. Take the key lime pies out of the fridge 15 minutes before serving.
