Ingredients

  • 160g of Greek yogurt
  • 2 Eggs
  • 60g of date sugar
  • 1 1/2 lemons (lemon juice)
  • Zest of 1 lemon
  • 90g of oat flour
  • 90g of almond flour
  • 1 tablespoon of poppy seeds
  • 1 teaspoon of baking soda
  • A pinch of salt

Instructions

  1. Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
  2. Start by mixing the liquid ingredients in the following order:
    Greek yogurt
    Date sugar
    Eggs
    Lemon zest & juice. It's preferable to use organic lemons if you're going to use the lemon zest.
    Then add the dry ingredients:
    Almond & oat flour
    Baking soda
    Salt
    Poppy seeds
    Mix everything together with a wooden spatula to thoroughly combine the ingredients.
    Bake in the oven for 35 to 40 minutes.
